Summertime Recipes: Black Bean Salad

This week, listener Teresa Gable in Orefield, PA, reveals her Black Bean Salad recipe. Teresa says that this dish never lasts even if she makes a double batch of it! It sounds like you better get a helping of it on the first go-around because seconds will be out of the question – Love it!

Black Bean Salad

1 can of 16 oz black beans (rinsed and drained)
1 fresh tomato, chopped (can use a can of diced tomatoes — just drain well)
1 can of corn (drained)
1/2 cup chopped peppers (any will do)
1 onion chopped (can use scallions – white and green parts)
1/4 tsp hot sauce
Fresh chopped parsley and basil to taste

Mix together.

Dressing:
1/3 cup olive oil
6 tbsp fresh squeezed lime juice
1 tbsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper

Whisk vinaigrette ingredients and add to salad.

Let marinate overnight for best flavor. Serve with tortilla chips. Enjoy.
