Donna’s Recipe: Focaccia Bread

Focaccia Bread

2 pkgs. Quick Rise yeast
2 cups tepid water
2 T. sugar
4 T. olive oil
½ cup vegetable oil
5 ½ cups flour
1 t. salt

Mix yeast and water. Let bloom. (This should take about 5 minutes or so.)

Add ½ flour and all the other ingredients.  Mix until combined.

Add remaining flour.  Mix thoroughly.  There is no need to knead.

Oil a bowl.  Place dough in bowl.  Cover and let rise until double. Punch down.  Let it rise again.

Punch down a second time and spread onto a cookie sheet or baking pan (UNGREASED).  Make indentions with your fingertips.  

Drizzle olive oil on top and sprinkle with salt, pepper and any combination of herbs (I usually use Italian herbs such as rosemary, oregano, basil, etc.).

Let rise slightly then bake in a 375 degree oven for around 30 minutes or until golden.  

Cool on wire rack, then slice however you like!
