Pumpkin Muffins
3 1/3 c. All purpose flour
2 2/3 c. White sugar
2 c. Pure Pumpkin
4 lg eggs
2/3 c. Olive oil
1 c. Milk
1 tsp. Salt
1 tsp. Baking soda
2 tsp. Cinnamon
1 tsp. Nutmeg
1 tsp. Ginger
1/2 tsp. Ground clove
Sift together all dry ingredients in large bowl, then set aside. Preheat over to 350°, grease muffin pans or 2 bread loaf pans. Mix all wet ingredients well. Add to dry mix and mix until well blended. If you use muffin pans, ladle each cup 1/2 to 3/4 full. If you are using bread pans, fill each half full. Bake muffins 25-35 mins or until toothpick comes out clean. If you used bread pans, bake 55 mins or until toothpick comes out clean.
This recipe makes 36 muffins or 2 loaves.
Additional note: you can use pre-mixed pumpkin pie spice 6 1/2 tsp instead of individual spices if desired.
