Get Cookin’ with Our Summertime Recipe Swap

Summertime is in full swing and that means lots of cookouts and picnics with family and friends. There is nothing like catching up with folks over a great meal. Plus, the pride of being the one behind everybody’s favorite dish during a get-together isn’t too bad either. You guys know what we’re talking about!

To get started our resident foodie Donna Britt shares her delicious Lemonade Sweet Tea and Watermelon Salsa recipes. Both are sure to help you keep cool in the heat of summer! Lemonade Sweet Tea  

This recipe makes one big pitcher, about 8 cups

3 cups water
6 regular size Lipton tea bags (or 2 Family Size tea bags)
1 cup fresh peppermint leaves (washed)
½ cup sugar
4 cups cold water
½ (12 oz) can frozen lemonade concentrate, thawed
Garnish: thin orange slices

Bring 3 cups water to a boil.  Remove from heat, add tea bags and stir in fresh mint.  Cover and steep for 10 minutes.  Discard tea bags and mint.  Stir in sugar until dissolved.  Pour tea into a big pitcher.  Stir in 4 cups cold water and lemonade concentrate.  Lay orange slices on top.  Serve over ice.

Spike It!
Add one ‘shot’ of bourbon or spiced dark rum to each glass of tea before serving.  Or, stir in one cup of bourbon or rum into pitcher if you want the entire batch SPIKED!  

 

 

Watermelon Salsa

Ingredients:*
Watermelon – 2 cups small dice (retain juice as much as possible and use in salsa)
Red onion – ½ cup small dice (red for color, sweet yellow onions are good too)
Jalapeno – ¼ to ½ very finely minced (more or less depending on desired heat) – remove seeds and ribs
Cilantro – about ¼ cup chopped
Lime – for juice – use the entire lime
Vegetable oil – 1 tablespoon
Salt and pepper

*All ingredients should be combined in similar proportions, but can be adjusted to taste.  Also, other combinations of melon (i.e. cantaloupe, honeydew) can be used.

Combine all ingredients and let it chill in fridge for a few hours – it is best the next day after ingredients have had time to combine.

Not only good with tortilla chips, excellent on grilled fish, fish tacos…
