Summertime Recipes: Pinwheel Burgers

This week, listener Sheila Senk in Blenheim, New Jersey, shares her Pinwheel Burger recipe. Sheila tells us that when you eat one of these burgers you can taste the filling in every bite!

Pinwheel Burgers

1 lb seasoned ground meat (beef, chicken or turkey)
3/4 cup bread crumbs, plain
1 egg
1/2 cup milk
1/2 cup Parmesan cheese (grated)

Filling:
1 cup diced green bell pepper
3/4 cup diced onion
1/2 cup diced mushrooms

Sauté the filling ingredients until onions are translucent, and then set aside to cool.

Mix ground meat – you can use beef, chicken or turkey – with the seasoning ingredients. Place the meat on a large sheet of wax paper or foil and press the meat into the shape of a rectangle. The meat is going to be rolled like a jelly roll.

Spread the filling mixture on the meat leaving about one inch on the far side free of mixture. You need this to help seal the roll. Carefully, lift the meat using the paper or foil to help and press lightly as you continue to roll the meat sealing the filling inside as you roll. Press the filling free side so the roll is sealed, then wrap the roll with the paper or foil and refrigerate for an hour or two. When ready to cook, simply slice the roll and then and gently press and shape each slice/burger.

If cooking on an outdoor grill, it’s best to use a burger basket, so you won’t have to move each burger and loosen the filling. You can just turn the basket over. Sheila prefers to use an indoor grill that cooks from the top and bottom at the same time.
