Summertime Recipes: Lemon Bars

Kickin’ It with Kix co-host Donna Britt shares her a tart, yet sweet dessert this week – Lemon bars.  If you give it a try, let us know what you think because you all know we love hearing from our listeners.

Lemon Bars

Crust
2 cups flour
1 cup powdered sugar
Pinch salt
2 sticks butter, room temperature

Filling
4 eggs
2 cups sugar
6 Tablespoons flour
6 Tablespoons lemon juice (freshly squeezed)

Preheat oven to 350 degrees.
Grease (with butter or cooking spray) a 9” x 13” pan.

Make crust by combining flour, powdered sugar and salt in large bowl.  Cut in butter to make a crumbly mixture.  Press mixture into pan.  Bake for 20 minutes or until lightly browned.  

To make filling, mix eggs, sugar, flour and lemon juice.  Pour over baked crust and bake for another 25 minutes.  Sprinkle with powdered sugar when done.  Cut into squares when cooled.
