Recipe: Caramel Apple Salad

Listener Jo shares her family recipe for Caramel Apple Salad. She says, "It’s a delicious dessert or can even be served as a Thanksgiving side dish…it's always requested at family gatherings or parties!"

The recipe was passed down to her by her sister-in-law Shalimar, who passed away after battling cancer. Jo says, "Sweet memories of her are stirred up whenever this [dish] is made." It sounds like a great way to remember someone who meant so much to her family. Check out the recipe below.

Caramel Apple Salad

1 tbsp. flour
1/2 cup sugar
1 egg
2 tbsp apple cider vinegar
8 oz can crushed pineapple (drained)
4 large Red Delicious apples (or other semi-tart apple)
8 oz Cool Whip
1 c salted peanuts

Cook flour, sugar, beaten egg, vinegar and juice from pineapple over medium heat until it thickens (should only be 2-4 minutes, no longer, as egg will become scrambled). Cool mixture in fridge.

Cut apples into bite-size pieces. Soak in a bowl of lemon juice to prevent browning.)

In a large mixing bowl, pour cooked "caramel" mixture over apples. Next, add the pineapple pieces. Fold in Cool Whip and salted peanuts.

Garnish with apple slices and some chopped peanuts. Keep chilled until ready to serve.
