Recipe: Mom’s Apple Cake

Listener Toni shares her family recipe for Mom's Apple Cake. Toni writes, "The recipe I am sharing is one my mother used to make and one of my favorites! I own a small, start-up bakery in Wauseon, Ohio, and this is one of only two cakes I offer." She adds, "[Its] such a happy recipe!"

Mom's Apple Cake

4 cups raw chopped apples
2 eggs
2 cups white sugar
1 cup oil
1 teaspoon vanilla

Mix these ingredients in a large bowl, then mix together.

3 cups flour
1 cup nuts (optional)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 – 2 teaspoons cinnamon (or to taste)

Add this mixture to the apple wet ingredients, mix and pour into a 9×13 or bundt pan. Bake at 350 degrees for 45 minutes. Top with icing, whipped cream, or a mixture of brown sugar, nuts and cinnamon sprinkled over the top.
